Baby Arugula Salad

Recipe Ingredients

2 Tbsp olive oil
2 Tbsp fresh lemon juice
1 tsp honey
Kosher salt and pepper
1 small shallot, finely chopped
6 cups baby arugula

Recipe Preparation

1. In a large bowl, whisk together the oil, lemon juice, honey, ¼ tsp salt and 1/8 tsp pepper; stir in the shallot.

2.Add the arugula and toss to coat. Serve immediately.

Recipe Ingredient

½ cup fresh orange juice
¼ cup fresh lime juice
¼ cup sour cream
Kosher salt and pepper
½ small cabbage (about 1 lb total), cored and shredded
8 oz fresh pineapple, cut into small pieces
½ cup fresh cilantro, chopped

Recipe Preparation

1. In a large bowl, whisk together the orange and lime juices, sour cream and ½ tsp each salt and pepper.

2. Add the cabbage and toss to combine. Let sit, tossing occasionally, for at least 20 minutes.

3. Fold in the pineapple and cilantro.

Recipe Ingredients

2 pints cherry tomatoes
4 cloves garlic, smashed
2 Tbsp olive oil
Kosher salt and pepper

Recipe Preparation

1. Heat oven to 400°F. On a rimmed baking sheet, toss the tomatoes, garlic, oil, ½ tsp salt and ¼ tsp pepper. Roast until the tomatoes begin to burst, 15 to 20 minutes.

Parsley Rice
Active Time:5 minutes
Total Time:20 minutes
Serves 4

Recipe Ingredients

1 cup long-grain white rice
1/2 cup fresh flat-leaf parsley, chopped
2 Tbsp olive oil

Recipe Preparation

1. Cook the rice according to package directions.

2. Fluff the rice with a fork, then fold in the parsley and oil.

1 Tbsp red wine vinegar
1 tsp Dijon mustard
Kosher salt and pepper
1 small head romaine lettuce, sliced ½ in. thick
1 small cucumber, sliced
1/2 small red onion, thinly sliced

Recipe Preparation

1. In a large bowl, whisk together the oil, vinegar, mustard and ¼ tsp each salt and pepper.Toss with the lettuce, cucumber and onion.
