So, in order to master one of the recipes for a delicious casserole with cottage cheese, first of all, let’s learn the basic principles of cooking this wonderful delicacy.
First, the main component is, of course, cottage cheese, it should not be very dry, medium-fat cottage cheese or fat is best suited, but the latter has the risk to cook in the oven rather than bake.
Therefore, it is best to choose a medium-fat cottage cheese, which, if desired, is passed through a meat grinder or whipped with a blender to crush all the grains. In this case, it turns out a homogeneous and very tender mass, but if you like to feel pieces of cottage cheese in a casserole, then it is enough just to mash it with a fork with other ingredients.
With curd clear, now let's talk about other ingredients. To prevent the casserole from getting rubber, you need to be very careful about the number of eggs, usually 2-3-8 pieces of cottage cheese are enough, depending on their size.

You will need:
- 2-3 pieces eggs;
- 500 g of medium fat cottage cheese;
- 75 g sugar;

- 100-120 g sour cream;
- 2 tbsp. l. semolina

For its preparation you will need:
- cottage cheese - 500 g;
- eggs - 2-3 pieces;
- peel 0.5 lemon;
- milk - 100 ml;
- semolina - 3 tbsp. l .;
- sugar - 110 g;
- starch - 40 g;
- lemon juice - 1 tsp. ;
- pitted cherries - 1 cup;
- apples - 3-4 pieces;
- sour cream - 3-4 tbsp. l .;
- cinnamon, vanillin, salt.
In general, any berries, not necessarily cherries, can be used to prepare the casserole, you can use those that are currently most available. Pour the semolina with warm water, so that it covers it completely, leave it to swell for an hour.
Then we separate the yolks from the protein, first rub with half of the sugar until the formation of white foam, and mix the remaining sugar with the swollen decoy, then mix everything together. Cottage cheese grind it through a sieve, mix it with ¾ milk, the resulting mixture should be similar to a fairly thick sour cream.
The prepared cottage cheese is mixed with the yolk-manna mass, after which it is enriched with vanillin and thoroughly mixed. In the resulting mass rub lemon zest and add lemon juice, mix.
Egg whites are whipped with a pinch of salt, then added to the dough and mixed. Then starch is added, the mass must be kneaded thoroughly, but carefully.
